Top This Pizza Crusts are already grilled. All you have to do is heat your pizza up in the oven or on your outdoor grill. Top the crusts lightly, a cup of shredded pizza cheese is enough. Avoid really wet ingredients as they will prevent the crust from crisping. Use sauces sparingly. Wet sauces should go on after the cheese either by dolloping them or applying them from a squeeze bottle in a zigzag pattern.

•In your oven: bake on a hot pizza stone or right on the oven rack at 450º for 8-10 minutes
•On your outdoor grill: preheat to 450º. Then turn down one half of the grill. Cook the pizza on the low heat half of the grill with the lid closed. Each Grill is different so check it as it cooks.

Authentic Pizza

- 1 grilled pizza crust
- 1 cup (volume) loosely packed pizza
  cheese (3 oz.)
- 1/3 cup Pomodoro sauce                    
- 1/4 cup  pesto sauce
- After baking sprinkle 1 tablespoon
  chopped parsley
  and 1/4 cup diced scallion green part only

Mediterranean Pizza

- 1 grilled pizza shell
- 1 cup (volume) loosely packed pizza cheese (3 oz.)
- 1/3 cup Pomodoro sauce                    
- 1/4 cup of  cooked spinach (defrosted from frozen)
- 1/4 cup crumbled feta cheese
- 1/4 cup of sliced
sautéed mushrooms  
- 1/4 cup of sliced black olives
- After baking sprinkle 1/4 cup diced scallion green part only

Portobello Mushroom Pizza

- 1 grilled pizza shell
- 1 cup (volume) loosely packed pizza cheese (3 oz.)
- 1/4 cup diced sautéed Portabella mushrooms
   (nice if flambéed in brandy at the end)
- 1/4 cup diced fresh plum tomatoes
- 1/4 cup caramelized onions
- Optional: (1/4 cup shredded Fontina Cheese)

Pineapple & BBQ Chicken Pizza

- 1 grilled pizza shell
- 1 cup (volume) loosely packed pizza cheese (3 oz.)
- 1/4 cup of diced prosciutto ¼ cup diced grilled pineapple
  (or roasted)
- 1/4 cup roasted red pepper
- 1/2 cup diced chicken in BBQ sauce
- After baking: ¼ cup  diced scallion green part only

Mozza's Pizza: coarsely crumbled fennel sausage, unsweetened whipped cream

Fresh Clam Pizza: fresh clams, strips of pancetta, lemon thyme leaves, olive oil, grated parmesan

Clams Casino Pizza: concentrated white clam chowder, canned clams (if you want to supplement the clams in the concentrate), diced bacon, parmesan cheese

Roger's Pizza: pesto, pizza cheese, feta, caramelized onions, chopped tomato pulp (salad spinner removes water and seeds). Remove from oven and sprinkle with chopped scallions.

George's Pizza: 1 grilled pizza crust (coat very lightly with olive oil spray). Coat shell with basil pesto. Add caramelized onions (include one sautéed clove of garlic). Add black olives. Add ground lamb (partially pre-cooked) could also use cooked Greek sausage. Sprinkle liberally with feta cheese. Optional: a sprinkle of a composite of Mediterranean spices (or simple a dash of curry powder).
