Vegan Spinach & Olive Pizza

     Ingredients

• 1 Top This! Whole Wheat Pizza Crust
• 1/2 cup pizza or marinara sauce
• 1 to 11/2 cups vegan mozzarella or pepper jack shreds or a combination of the two
• 2/3 cup sliced black or green brine-cured olives (or both)
• 2 big handfuls baby spinach
• Optional: dried oregano, Italian seasoning, and/or hot red pepper flakes or mini hot peppers from the olive bar

​​     Directions

1. Distribute the sauce and cheese over the crust
2. Add optional ingredients, if desired
3. Place pizza directly on the rack of a 450° oven,
   grill or skillet and remove when cheese is melted
   and crust is rigid when lifted on one side
4. Sprinkle on olives then spinach and cook for
   1 minute max or until spinach wilts
