White Clam Pizza

     Ingredients
  • 1 Top This! white pre-grilled pizza crust
  • 2 tbs. Olive Oil
  • 6 Garlic Cloves, minced
  • 1/2 tsp. red pepper flakes
  • 6 oz. fresh or canned chopped clams
  • 2 tbs. dry white wine or dry vermouth
  • 2 tbs. chopped fresh parsley leaves
  • 3 oz. Grated Pecorino Cheese

     Directions
  1. Heat the olive oil in a medium frying pan
  2. Add the garlic and red pepper flakes
  3. Cook for 30 seconds stirring occasionally
  4. Stir in the clams, wine, and parsley, bring to a simmer and cook stirring often until the liquid has reduced to a glaze, about 2 minutes
  5. Spread the clam mixture over the pizza crust leaving 1/2 inch from the edge
  6. Top with the Pecorino cheese
  7. Bake at 450° for 6-8 minutes until the pizza does not bend when lifted on one side
  8. Slice and be careful to hold the crust level because there is no melted cheese to hold the toppings on the crust.
